Fiesta Salad - Diamond Cafe

This is one of THE best salads that I've had to date.  The Diamond Cafe serves it every Monday, and if I have time, I'll go pick one up.

I posted a pic before, but I thought this was a better shot and wanted to share it with you!!

I'm certainly going to figure out how to recreate this wonderful salad at home!!

Fiesta Salad - Diamond Cafe

This is the salad that everyone lines up for.  I'm sorry that I couldn't get a better pic of it, but I was hungry and all I could think was to take a quick pic and EAT!!!!

This salad has a lot going on, so I'll start with the dressing, which is an avocado ranch dressing.  The ingredients include: jicama, kidney beans, black olives, roasted corn, tomatoes, cheese, red onions, chicken, salsa, tortilla strips and romaine lettuce.

Lip smacking good!!!!
