Pasta with Bacon Topping

This is one of those dishes that I created using whatever I had in the kitchen at the time.  The end result was awesome!!

The bacon was put on as a last minute thought.  This pasta dish incorporates some of my favorite things, such as ground turkey, spinach and mushrooms in a creamy, savory sauce.

I think the bacon part really won my son over!!

My Go to Dish

This is a dish that I make when I need to feed a lot of people, and I have little time on my hands.  I don't have an official name for it, but I use ground turkey, Campbell's Cream of Mushroom soup, Campbell's Cream of Chicken soup and chicken broth. If I can find a soup that combines other things like roasted garlic, I'll buy that instead of one of the plain ones.

I season and saute the ground turkey until it is browned, drain the liquid then add the two soups and the broth.  After I add the soups and broth, I add 1 can of 2% milk, about 3 Tblsp. butter, 1 package of Splenda and some Worcestershire sauce and seasonings, stir and let simmer until all the flavors blend. After simmering, I add fresh spinach and let it wilt.

I always use some type of pasta, but today I wanted to see how it would work with rice, which is why I was at the supermarket today.

Surprise, surprise, surprise, it worked just as good, if not better with rice!!  I of course added some red pepper flakes once I plated it, at least on mine.

Here is the finished product, oh, and please ignore the paper plates you've been seeing in some of my pics.  I moved recently and finding and putting everything away has been an interesting journey!


Lemon Scallop Risotto

I was in the mood for risotto, and every time I thought about it, I was in the wrong restaurant to order risotto.  I finally decided I would attempt to make it myself. Yep, I have zero experience making any kind of risotto.

I checked out recipes on line, and found one that sounded really interesting. The results are in the pic below.  It was VERY lemony, much more than I thought it would be.  The consistency was what I would have expected from a risotto. This was also my first time cooking with arborio rice.  

This dish takes time and patience, but was well worth it.  The only thing I would complain about with my first time risotto dish was the fact the my scallops refused to sear.  I used a heavy pan, but they just kept putting out juice and never seared.  Not sure if it was something I did wrong, or if it was the scallops I bought.  Either way, they were still good.  I didn't cook them a long time because I was afraid they would get tough.

Tuna Salad Sandwich

This is one of my favorite sandwiches now.  I decided to switch it up and use spinach instead of lettuce.  It was SO good!!! I think I'll use spinach instead of lettuce from now on.  Here is a pic of it!!
