Pecans
Pecans have to be one of my most favorite nuts!! I love pecans, and I'm willing to pay the price to have really good ones.
I found these at my favorite veggie stand, which has so much more than just veggies to offer.
These are kind of pricey, but since they are already shelled, and mostly whole, they were worth the price!! :-)
Garlic Chips
During one of my recent trips to my favorite veggie stand, I found these interesting chips! They are garlic chips, and boy do the hold a garlic punch!! I don't think I was ready!!! haha
I love garlic, but these may be a little too intense for me. Having said that, I'm slowly working my way through the bag. Don't get me wrong, they are good...just REALLY intense!!
Corn Tortillas
Hi everyone!!! It's been a while since I've posted, and I apologize for that. 2015 is shaping up to be a busy year for me. Thank you for your patience, I appreciate it!!
In this pic are a couple of corn tortillas that I warmed on the stove, and topped with some natural peanut butter, some sliced bananas and drizzled with honey.
The reason I made these is because I hadn't gone grocery shopping yet, so went on the internet and found a recipe that I could make with what I had in the house!!
You know what??? They were VERY tasty!!! I will definitely make these little beauties again!! :-)

Roasted Potatoes with Boiled Egg
I was having a food meltdown when I came up with this dish!! lol I don't know what else to call it, because I was hungry at the wrong time (kind of late in the evening).
I was thinking what can I eat that won't be too heavy, so I decided to roast two small potatoes with fresh garlic. The boiled egg idea came about because I saw some boiled eggs when I opened the fridge. :-)
End result, food satisfaction!! I sprinkled a little paprika on top. A very tasty last minute idea!!
Pumpkin Curry Fritters - Made by Ty
My daughter found a recipe for pumpkin fritters that are seasoned with curry, so you know what my first reaction was. I'm not a "stick in the mud," so I told her that I would try them.
OMG!!!! They were savory and delicious!!!! Who knows, maybe I'll put curry back in my diet!!
For the second batch, she added a little brown sugar, which gave them a new sweet twist! I absolutely loved both versions!!! :-)
Hummus - Made by Ty
My daughter has loved hummus since the first time she ate it. We have always bought hummus already made from a store, but she got the idea to make it herself, after I bought her a kitchen Ninja.
In the first pic, you can see the ingredients that she used for the hummus. The hardest thing to find was the Tahini (which is a sesame seed paste). We finally found it at Whole Foods. A store associate had to help us, because we were totally frustrated. She took us right to it! it was in the only aisle we didn't go down!! lol
In the bottom pic is the finished product. I must say that it was better than the store bought version, because it was fresh!!
It's safe to say we won't be buying hummus from the store anymore!!

Cheese Ball - By Timothy
My WHOLE family looks forward to this cheese ball that my niece's husband Timothy makes during the Holidays!
I wish I knew how he made it, but I think it's a closely guarded secret!! He got us good this year. Me and my family arrived early, and we were expecting him to bring the cheese ball out. After a while, we asked about it, and he said "no, I didn't make it."
We honestly felt so let down!! After a few minutes he came around the corner with it and we were so excited!! It's the simple things in life folks!! ;-)
Awesome, awesome cheese ball is all I can say!!!
Nachos - Salsa Rojas
You know how you have those moments when you want something to eat, but you're too lazy to actually cook something? Yeah, me too!!! :-)
The nachos in the pic below was a result of one of those moments. I wanted something tasty, but simple.
I decided to make these simple nachos, using just sharp cheddar cheese that I grated myself, and some fresh Salsa Rojas to top them.
OMG!!! Maybe I was just extremely hungry, or they were just THAT good!! Either way, I really enjoyed this plate of nachos!! Soooo good!!!

Fruit Snacks - Black Forest
I bought these simply because they were on sale! I couldn't pass them up!! haha
I was very pleasantly surprised by them. Turns out my sister already knew about them, and so did one of my daughters! Best kept secret of all times!!
They have a nice juicy center, and they have great flavors!! I will definitely buy these again!!

Smoked Salmon Dip - Safeway
My first thought about anything fish related that is packaged, is not a good one! I was SO wrong on this one. Not only did it taste fresh, but it was so good, I had to control myself with how much I ate!!
My oldest daughter picked this up when she was shopping in Safeway. She came home and said, you have to try this, it's good. I was skeptical, but willing to give it a try.
I ate it with with some pita chips, and boy oh boy was it GOOD!!! It has a little bit of spiciness to it, which I love.
If you have a Safeway near you, you MUST give it a try!!

Apple & Cottage Cheese
Sometimes the simplest thing can be the best tasting thing!! I don't know about you, but when I snack, I don't always want something that is heavy in oils and fat. I'd rather have something light and tasty.
Don't get me wrong, I'm just like the next person and from time to time, I do indulge in things that I shouldn't. haha
This was a really juicy sweet apple that I paired with some plain cottage cheese. It worked well together!! :-))

Homemade Guacamole
I wasn't always a fan of guacamole, then one day, I tasted it the way it should be made, and have been eating it since that day!!
I was watching a cooking show a while back, and the lady was talking about the "easy way" to make guacamole. I was all ears!!
It took some time for me to get it right, but I finally did. My first issue was how to pick the perfect avocado. Man, I messed up the first three times I tried to make it. I realized that picking the right avocados was key. You have to pick the ones that are not to hard, and not to soft, and have some give to them when you squeeze, otherwise, you'll have that super "green" taste that you can't fix no matter what you do.
Secondly, I buy medium Salsa Rojas, because it has everything already in it. No chopping, dicing or anything else!! I cut the avocados in half, pit them and cut them in squares while they are still in the shell. I scoop the flesh out with a spoon and place into a bowl. I add a couple of scoops of the Salsa Rojas, some lime juice and a little salt. Viola!!! Guacamole!! :-))

Baked Avocado with Egg
I've been seeing these baked avocados with egg, and I've been really curious, so I had my daughter pick up some avocados from the store so I could try the recipe.
You know what?? They came out really good!! It is my first time tasting these (here I go again with the firsts..haha). I was pleasantly surprised.
I've always been a fan of avocados, and eggs, so you know I was happy when I learned I could eat them both together (outside of a salad).
These can be eaten for breakfast or a snack. Good stuff!!! :-)) The link to the recipe I used is down below.

Spicy Red Pepper Hummus - by Janice
My sister Janice came by my house yesterday with an unexpected treat!! She made some spicy red pepper hummus!!
I was kind of disappointed at first, because I didn't have anything to eat it with. Then it hit me, I decided to make some wheat tortilla chips to eat it with!!
I wish you guys could taste her hummus!! It's nothing like the store bought version, because it's supper fresh. She actually uses fresh chickpeas, instead of canned ones.
SO good, and healthy too!!

Cucumbers Stuffed with Humus - By Ty
My daughter is very creative, whether it be the way she dresses, fixes her hair, draws or cooks! Actually, I can say that about both of my daughters! My son is creative too, he just likes to keep that fact under wraps. :-))
My daughter came up with these beauties. I wish you could taste them right through your screen!! She hollowed out the cucumbers, squeezed some lemon juice in them and scooped some humus in them. To - die - for!!!!
She took a pretty good pic of them too!!
