Crispy Bacon

The trick for me is crispy, not burnt!! I LOVE crispy bacon.  Here is a plate that I made along with the creamy grits!!

Love bacon like this, but I'm not against chewy bacon!! I love that too, IF the bacon is thick sliced.



Grits, Bacon and Omelette

I'm a country girl at heart, so I can't get away from my love of creamy, buttery grits!!

I just love them, but as I've said before, they have to be smooth and creamy. I added some crispy bacon, and an unconventional omelette!  Meaning, this omelette had left over meat from the tacos I made, mushrooms and cheese.

I was totally being lazy when I made the omelette, so I just threw my eggs in the same pan I sauteed the mushrooms in.  The end result was a very tasty, but not so pretty omelette!!

Turkey Bacon Breakfast Sandwich

So, for this one, I fried a large egg, fried my turkey bacon and browned my toast in the oil left in the pan from the turkey bacon.

This was a nice, crunchy early morning bite that I absolutely loved!! When I brown my bread in the pan, it always tastes much better than dry toast to me.

Enjoyed this to the last bite!!


Mediterranean Inspired Open Faced Veggie Omelet - Made by Ty

Since my daughter has changed her diet to a veggie diet, she's been cooking a lot more, and I don't have a problem with that!! :-)

In the first pic is her veggie Mediterranean inspired open faced egg white omelet.  In the second pic is the omelet plated, and topped with sour cream, Frank's Red Hot sauce, olives and avocados.

It was REALLY, REEEEEAAAAALLLY GOOD!!!!! :-)




Belgian Waffles

I'm a lot like most people, because I buy kitchen appliances and don't use them as much as I should!! 

I bought a nice waffle iron a long time ago, and I can count on one hand how many times I've actually used it.  I'll blame it on my work schedule, and just being lazy about it. ;-)

In the pic below is my version of the Belgian Waffle!  I had a hard time getting them browned.  I'm not sure what I was doing wrong.  They were still tasty, but not as brown as I like them to be.

I topped them with some bananas, whipped cream and Hershey's chocolate syrup!  This was my face after eating them :-))


Whole Wheat Bagel with Peanut Butter and Bananas

A neighbor of mine gave me a jar of natural peanut butter, which I can only recall eating once while growing up.  My dad was a big fan of natural peanut butter, but when you are a kid, you want all the sugar and salt you can get!  So back then, I wasn't having it!! lol

I decided to give it a try, and I actually like it now.  Once you stir the oils and peanut butter together, and store it in the fridge, it has a nice creamy consistency.

In this pick, I toasted the bagel and topped it with the peanut butter (as you can see, it was literally dripping off the sides of the bagel), and then added the bananas.

I have never tried this combo, but I was pleasantly surprised!! I REALLY loved it! I would say this is a must try, IF you love peanut butter and bananas. :-)


Veggie Breakfast Scramble - Made by Ty

This veggie breakfast scramble made by my daughter Ty, was so on point!! I mean I can't even describe to you how delicious it was.  You're just going to have to take my word for it!!

For this dish, she used spinach, red beans, egg whites, garbanzo beans, black olive and mushrooms.

Yummy combo for sure!!! :-)

Fried Bologna Breakfast Sandwich

I'm not exactly sure when I first had fried bologna, but I can tell you that I like it far better than cold bologna! :-)

You would think I was some kind of bologna connoisseur, but low and behold, I'm just an average, sometime bologna eater!!

When I do buy it, it has to be the thick sliced version, or the kind that comes in a long tube form that you have to slice.

For some reason, to me, it just taste better!

So in this pic is what I wound up with when I fried my bologna. A bologna breakfast sandwich, which was very tasty!! 



Holiday Breakfast - By Afiya

Hi Everyone!! I hope everybody has had a wonderful start to the New Year!! I'm excited about what this year of blogging will bring!!  So here is my first post of 2015!!! :-)

My niece Afiya is an AWESOME cook!!! She was kind enough to share this beautiful pic of the breakfast she prepared for her family, while home on a break from school!!

Not only is she an awesome cook, but she's really good with plating as well. What a beautiful, delicious looking breakfast!!! :-)

Omelette - By Ty

When my daughter's friends spend the night, I reap the benefits!!! I totally welcome her friends!! haha

She made that delicious omelette in the pic below.  This omelette had black beans, avocado, salsa verde, onions, mushrooms, cheddar cheese, black olives and sour cream.

This was one of her best creations to date!!!

German Pancake & Sausage with Powdered Sugar

My sister made one of these years ago while we were both still living at home with our parents.  I set out on a mission after I left home to try to make one as good as the ones she made when we were kids.

This is only the second time that I've made a German Pancake!! It was so easy to make, which is what attracted me to this recipe.  I didn't have to run to the store for any of the ingredients!!

I put the sausage on top for the pic. ;-))

Bacon, Egg & Cheese Sandwich - Diamond Cafe

Here I go with the breakfast thing again!! ;-))  This sandwich from the Diamond Cafe was melt in your mouth delicious!

Crispy bacon, fluffy egg whites and provolone on toasted wheat bread!! Yummy!!!

I love, love, LOVE breakfast and could eat it for every meal of the day!!  In this pic are some crispy hash browns, a sausage link and some fluffy scrambled eggs with hot sauce!!

Ramen Egg - By Ty

The first time my daughter mentioned ramen egg to me, all I could do is scratch my head.  I had never heard of such a thing, so she promised to make it for me. The very first time I tasted it, I fell in love with it!!

Think in terms of an omelet, because that's kind of how it comes out.  An omelet with noodles!! haha

In this version, she added some soy Chorizo, taco seasoning, and the ramen seasoning pack.

I put Sriracha on mine, and added the salami.  :-))


Grits & Bagel

I have a DEEP love for grits.  It reminds me of Sunday mornings as a child, because that was the only time my mom would cook them.  She would cook creamy grits with bacon, sausage and eggs. 

Just thinking about those times puts a smile on my face!!

In this pic are some creamy grits with butter, boiled eggs and turkey bacon.  On the side I have one bagel, but I couldn't decide which cream cheese to use, so I used the salmon cream cheese on one side and the jalapeno cream cheese on the other side.

One delicious breakfast for sure!!! :-))


Breakfast Sandwich - Diamond Cafe

This people, is my "go to sandwich" as you probably know by now.

I woke up, went in to work and waited for the cafeteria to open.  The whole time, I was thinking that I really wanted to eat oatmeal.  Somehow, I wound up ordering my favorite breakfast sandwich.

I got the usual things in it, ham, provolone and eggs.  I asked for egg whites, but the short order cook must have had his mind elsewhere, because he gave me regular eggs.  

Oh well, anything in a crescent is good to me!! It was delicious as usual!!

Light Breakfast

Sometimes, you just want something light...other times, not so much!! haha

This was one of those times.  I woke up, and couldn't decide what I wanted for breakfast.  It was my day off yesterday, so I could have cooked anything I wanted.

This is what I came up with!! Some fresh avocado, a boiled egg, and some low fat cottage cheese. This breakfast hit the spot, and was so yummy!!!

OH, so you noticed the bottle of Frank's Red Hot sauce in the background! If you didn't know that I LOVE spicy stuff, you'd better ask somebody!! lol

Crescent Sandwich - Diamond Cafe

I decided to think outside of my usual "box" for breakfast, and ordered this breakfast sandwich.  It's a nicely toasted crescent, with ham, provolone and the fluffiest egg whites I've eaten in a while.

Just looking at this pic makes me want to eat another one.  The short order cook new what he was doing.  Oh my GOODNESS, it was absolutely tasty until the last bite!!

Baked Avocado with Egg

I've been seeing these baked avocados with egg, and I've been really curious, so I had my daughter pick up some avocados from the store so I could try the recipe.

You know what?? They came out really good!! It is my first time tasting these (here I go again with the firsts..haha).  I was pleasantly surprised.

I've always been a fan of avocados, and eggs, so you know I was happy when I learned I could eat them both together (outside of a salad).

Turkey Bacon

If you haven't tried turkey bacon, you MUST give it a chance.  Sure, it doesn't have all the fatty goodness that regular bacon has, but it is delicious none the less.

I was kind of skeptical about turkey bacon for a long time, then I decided to give it a try, and I'm glad I did.  I am officially a turkey bacon lover!!

You must try some!! What are you waiting for?? lol ;-))
